Mediterranean Christmas Pasta

This Mediterranean pasta combines raw organic spinach, sun-dried tomatoes, pine nuts, kalamata olives, and fresh mozzarella with some tagliatelle.  The oil from the sun-dried tomatoes was enough to provide flavor and moisture to the noodles.  Buon Appetito!

1 lb pasta

1 jar sun-dried tomatoes in oil

1/2 jar pitted kalamata olives

1/4 cup pine nuts, toasted

2-3 cups spinach, roughly chopped

1/2 container mozzarella, ciligiene (you can also cut bocconcini or fresh mozz down into bite-sized pieces)

Cook pasta according to package directions. Combine pasta and remaining ingredients.

This recipe is good both hot or cold.
