Cowboy Caviar
Cowboy Caviar is one of my favorite weekly preps! I use it on top of chicken and fish, as a side dish, and we love it as a “tide me over until dinner” snack. The beans provide a plant-forward source of protein, fiber and iron while the veggies provide some Vitamin A and C. Together, this combination of ingredients provides sodium, potassium and calcium – some essential electrolytes!
The dressing adds a pop of flavor that really brings the whole dish together. If you’ve never tried Cowboy Caviar, whip up a batch and watch it become one of your family’s new favorites.
15 oz can pinto beans, drained and rinsed
15 oz can black beans, drained and rinsed
15 oz can white corn, drained and rinsed
3-4 vine ripe tomatoes, diced
1 red onion, finely diced
1-2 bell peppers, diced
1 avocado, diced (optional healthy fat addition)
Dressing:
1/3 cup olive oil
2 Tbsp rice vinegar
2 limes, juiced (approximately 2 Tbsp)
1 tsp garlic, minced (or ¼ tsp garlic powder)
1 tsp sugar
½ tsp each kosher salt and black pepper
