BACON & GRUYERE EGG BITES
I absolutely love a certain coffee shop’s sous vide egg bites! I don’t have a sous vide machine at home so I use what I call the poor man’s sous vide – a Water Bath. The consistency of these eggs is so soft and pillowy, you will love them.
For a complete breakfast, I eat 2 of these egg bites with a slice of @daveskillerbread and some tomato slices for a YUMMY 29g Protein and 26g carbs
Makes 12 muffins
8 Large Eggs
1 cup cottage cheese
1 tsp salt
1 tsp pepper
6 slices of bacon
3/4 cup shredded Gruyere cheese
Preheat oven to 350F.
Cook bacon to your desired cripsness in the oven, microwave, air fryer or a pan. Drain on paper towels and then crumble..
In a blender, combine eggs, cottage cheese, salt and pepper.
Spray a muffin pan. Add 1 Tbsp Gruyere cheese on the bottom, fill muffin tin with egg mixture, and sprinkle crumbled bacon on top.
Place muffin tin onto a sheet tray. Add boiling water between the muffin tin and sheet tray until water reaches about halfway up muffin tin. CAREFULLY, transfer to oven.
Bake for 25-30 minutes or until eggs are set. Remove from oven and let cool.
NOTE: Remove just the muffin tin from the oven. Turn off the oven and let the pan of water cool before removing. This will make your life much less dangerous!
These store in the refrig for a week or wrapped and in the freezer longer.
