Veggie Packed Sloppy Joes
CREDIT TO MY MOM! Seriously, I’ve been eating my mom’s version of this recipe since I was a kid. There’s just something so hearty and comforting about a good sloppy joe. I add in carrots to her recipe to pack in even more micronutrients.
Let me tell you…this is one of our household family favorites. It’s so easy to throw together as a make ahead meal for the week. It even comes together quick if you’re looking for a quick after work dinner idea.
1 onion, diced
1 bell pepper, diced
2-3 celery stalks, diced (optional)
2 large carrots, diced
1.5 lbs ground beef
¾ cup ketchup
1/4 cup water
1 Tbsp brown mustard
1/4 tsp salt
1/4 tsp pepper
Sauté the veggies and meat until meat is browned. Drain off excess fat. Return pan to stove, add remaining ingredients. Bring to a boil, lower to simmer, cover and let cook for about 20-25 minutes.
