How to Make Homemade Nut and Grain Pancakes: A Hearty Breakfast Recipe
This is a super simple, high quality ingredient pancake recipe. If you are Gluten Free, just substitute GF Flour and add additional liquid.
After mixing the wet and dry ingredients, simply laddle some batter on the griddle and cook the pancakes until browned.
Ingredients
1 cup old-fashioned oatmeal
3/4 cup whole wheat flour
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups almond milk
ΒΌ cup vegetable oil
2 eggs or 1/2 cup applesauce (if vegan)
1/4 cup sugar
3 Tbsp chopped walnuts
Directions
Grind the oats in a blender or food processor until fine. In a large bowl, combine ground oats, whole wheat flour, baking soda, baking powder, and salt.
In another bowl, combine almond milk, oil, egg, and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes. Stir in nuts, if desired.
Lightly oil a skillet or griddle, and preheat it to medium heat. Ladle 1/3 cup of the batter onto the hot skillet; cook the pancakes for 2 to 4 minute or until brown.
